Tasting notes
Pale straw in color, this wine reveals remarkable aromatic complexity and intensity. It offers aromas derived from its ageing in French oak, such as dried fruits, honey, and caramelized fruit, well balanced with minerality and subtle citrus nuances. Its complexity unfolds in multiple aromatic layers. On the palate, it shows a well-defined structure, firm acidity, and a long, persistent finish, a clear indicator of its outstanding gastronomic potential.
Food Pairing
Roasted goat, oven-roasted codfish and soft cheeses.
Vinification
Crafted from grapes sourced from the old vines of Quinta da Teixuga, hand-harvested in 15 kg boxes. Manual selection took place on a sorting table. After destemming and crushing, the wine began fermentation in stainless steel tanks under controlled temperature, completing the process in French oak barrels.
Vineyards
Vines with an average age of 40 years old.
Aging Aged for 40 months in French oak barrels. During this period, bâtonnage was carried out periodically to ensure optimal integration between the wine and the wood. After bottling, the wine was further aged for approximately 6 months in bottle. Thanks to the particular conditions of its ageing and the distinctive characteristics of the Encruzado grape, this is a wine with remarkable ageing potential.
