Tasting Notes
Red wine with a deep ruby colour. Elegant aroma of black fruit wrapped in notes of graphite and menthol. On the palate, it is intense and refined, showing the evolution of prolonged ageing in oak. Fresh, with well-defined acidity and tannins that are present yet supple. Great volume and complexity, with a very long and persistent finish.

Food Pairing
Pairs well with a wide range of traditional Portuguese dishes. Grilled and/or roasted red
meats. Soft cheeses.

Vinification
Crushing and destemming of the grapes. Fermentation in stainless steel tanks at a temperature of 25 °C, with periodic pump-overs to enhance the extraction of phenolic compounds. Co-inoculation of fermentation yeasts and lactic acid bacteria, allowing simultaneous completion of alcoholic and malolactic fermentation. Post-fermentation maceration for three weeks.

Barrel Aging
Aged for 18 months in 7,000-litre used French oak vats.
